Primor Passion Fruit Salad Dressing Recipe
Passion fruit already brings the acidity a vinaigrette needs, so this comes together with almost nothing else. Shake it in a jar and it keeps in the fridge all week.

Easy
Ingredients
- 1/4 cup Primor Passion Fruit Purée
- 1/2 cup olive oil
- 2 tbsp white wine vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and black pepper, to taste
Method
- Add the passion fruit purée, vinegar, honey, and Dijon to a jar.
- Seal and shake until the mustard is fully combined.
- Add the olive oil, seal again, and shake hard until it emulsifies.
- Season with salt and pepper and shake once more.
Notes
The Dijon is what holds the emulsion together, so do not leave it out. This works best on greens with something sweet or salty in the bowl, like grilled shrimp, avocado, or goat cheese. It keeps in the fridge for a week, and it will separate as it sits, which is normal. Shake before pouring.
