Primor Tamarind Sweet & Spicy BBQ Sauce

Tamarind takes a standard barbecue sauce somewhere else. It brings a sweet-sour depth that most bottled sauces are missing, and you only need three things to get there.

Method

  1. Warm the barbecue sauce in a saucepan over low heat.
  2. Whisk in the tamarind purée until fully combined.
  3. Add chili flakes and salt, then simmer for three to four minutes.
  4. Taste and adjust, then take off the heat.

Notes

Start with a plain or smoky barbecue sauce rather than something already sweet, or the tamarind gets lost. Brush this on during the last few minutes of grilling. The sugars will burn if it goes on early. Works on ribs, chicken, brisket, shrimp, and pork. Keeps in the fridge for two weeks.
