The Primor Mojito
Most of the work in a mojito is the limes. Purée takes that out, and you get the same tartness in every glass instead of whatever the fruit happens to give you.

Ingredients
- 1.5 oz Primor Lime Purée
- 2 oz dark rum
- Fresh mint leaves
- Club soda, to top
- Ice
- Mint sprig and lime wheel, to garnish
Method
- Press the mint leaves gently against the bottom of a tall glass.
- Add the lime purée and rum, then fill with ice.
- Top with club soda and stir once from the bottom up.
- Garnish with a mint sprig and a lime wheel.
Notes
Press the mint, do not grind it. Torn leaves release chlorophyll and the drink turns bitter and grassy. Slap the garnish sprig between your palms before it goes in so the aroma comes through. White rum makes a lighter version. Add half an ounce of mango, passion fruit, or pink guava purée for a tropical mojito.
